Smoked salmon and vegetable pancakes
Delicious and healthy, these pancakes will make an excellent breakfast or lunchtime savoury treat.
 

115g self-raising flour

2 eggs

120ml skimmed milk

Handful fresh coriander, chopped

400g tin sweet corn, drained

300 grams smoked salmon, finely chopped

Olive oil cooking spray

Preheat the oven to 180°C / 350°F / Gas mark 4.

Line a baking tray with greaseproof paper and set aside.

Sift the flour into a bowl.

Whisk the eggs and milk together and pour in with the flour and mix to a smooth batter.

Add the coriander and corn, salmon and mix again.

Lightly spray a large non-stick frying pan.

Drop tablespoons of the mixture into the pan, allowing room for spreading.

Cook over medium heat for 3 minutes each side.

Transfer to the baking tray and repeat with remaining mixture.

Bake the pancakes in oven for 10 minutes or until risen.
