Loaded with iron and protein, this tasty, healthy omelette is perfect any time of the day.
6 Eggs
Skimmed milk
200g Baby spinach leaves
½ tsp nutmeg
Cooking spray
Whisk the eggs in a bowl and add a little skimmed milk.
Stir in the baby spinach leaves and season with salt, pepper and the little nutmeg.
Use a large frying pan and spray with the cooking oil, pour in the egg mixture and cook on each side until set flipping over using a plate to hold the omelette in place.
Slide the omelette from the pan to a chopping board or plate and serve in generous slices.
