Chicken satay with peanut sauce

Chicken satay with peanut sauce
 
Little skewers with chicken and a light peanut dipping sauce, delicious fun for the kids.
 

Small piece ginger

2 garlic cloves

Zest and juice 1 lime

1 tsp clear honey

1 tbsp soy sauce

1 tbsp mild curry powder

3 tbsp smooth peanut butter

500g skinless chicken fillets

165ml tin light coconut milk

1 tsp vegetable oil

Cooked rice to serve

Cucumber salad

1 cucumber

2 tbsp white wine vinegar

1 tbsp golden caster sugar

Sweet chilli sauce (optional)

Bunch coriander, leaves picked (optional)

Peel and grate the ginger into a bowl.

Repeat with the garlic and lime zest.

Halve the lime juice it, then mix it in a bowl with the honey, soy, curry powder and peanut butter.

Add a small splash of water if it’s too thick then spoon two-thirds of the mix into a small pan and set aside.

Cut the chicken into strips, tip it into the remaining third of the peanut-butter mix and stir well.

Cover with cling film and chill until required.

While the chicken is marinating, pour the coconut milk into the pan and stir together with the peanut butter mix. Heat the sauce through.

Thread the chicken needs to be threaded into ‘S’ shapes onto the skewers.

Heat the grill to high and brush a baking tray with oil.

Line the skewers evenly on the tray and grill for 10 minutes, turning occasionally, until lightly charred.

Using a vegetable peeler, peel the cucumber into a bowl, less the seeds.

Mix the vinegar and sugar until the sugar dissolves then add the sweet chilli, if using and pour over the cucumber.

Add the coriander if using and serve, with skewers, sauce and salad in bowls and rice on the side.
