Mint couscous with mixed vegetables

Fresh and delicious, light and satisfying make up this quick and easy recipe.
500g courgettes, thinly sliced lengthways, then chopped
2–3 tbsp olive oil
200g couscous
1 lemon, juiced
1 red chilli, deseeded and finely chopped
Handful, radish, thinly sliced
Bunch spring onions, finely sliced
Handful mint, leaves picked and chopped
Vegetarian hard cheese
2 tbsp Nigella seeds, black sesame seeds or cumin seeds *also go well
Use a griddle pan and heat on high.
Put the courgettes in a bowl and drizzle over the olive oil.
Toss to coat, then cook for 1-2 minutes each side, until griddle marks are evident.
Meanwhile, prepare the couscous following the packet instructions.
Use a fork to fluff the grains.
Combine the lemon juice, chilli and oil, and pour over the couscous.
Stir through the courgettes, tomatoes, onions, mint and a little seasoning.
Grate over some cheese, and sprinkle with the seeds if desired before serving.
